What kind of cookbook is The Cooking of India?
Matthew Locricchio’s book is part of Superchef, a series of cookbooks that bring traditional recipes from other countries. This new series is written for budding chefs. If you are interested in dabbling in international cuisine this is a good series. We have eight of the titles.
What makes this cookbook fun to use?
I like the layout of the recipes and step by step instructions. The photographs in The Cooking of India are eye-catching .
What is special about this cookbook?
Since I am from India, I decided to peruse this volume. I like the description of the country at the beginning of each volume. Each recipe starts with a brief description of the item. In many Indian recipes you will commonly see the ingredient ghee (Indian clarified butter), and this books gives you the recipe to make it. It also gives you the recipe for paneer (fresh Indian cheese).
Can you easily buy the ingredients for the recipes?
Most of the ingredients are available from Indian stores, and you may also find them in the Asian/International section of some grocery stores.
What recipes from this cookbook should I make?
If you like the sweet and spicy chutneys from the Indian store, try making banana and date chutney (pg. 34) and carrot chutney (pg. 36). The garam masala, matar paneer and saag recipes are good, too. The Sesame Nut Cookies (Til Ladoos) recipe sounded so easy, I decided to try it. But in my experience Ladoos are always tricky to make. I have seen my mother and grandmas make them, there is always a special trick to get them right. As luck would have it my cookies crumbled. They were tasty though. I guess I will have to make them a few times to find the special trick.
